Lighter Pumpkin Spice Tres Leches Cake

1. **For the cake:** Combine the 1 box sugar-free vanilla cake mix, 3 eggs, 1¼ cups reduced-fat milk, 1 can pumpkin purée, and 2 tbsp pumpkin spice. Mix all ingredients until smooth.
2. Pour the cake batter into a 9x13-inch baking dish and bake at 350°F for 34 minutes, following any additional instructions on the back of the cake mix box.
3. **For the tres leches mixture:** While the cake cools, whisk together 1 (12 oz) can fat-free evaporated milk, 14 oz sugar-free condensed milk, and ¾ cup reduced-fat milk. Pour this mixture evenly over the cooled cake.
4. Let the cake absorb the milk mixture completely, then refrigerate for several hours or overnight to chill thoroughly.
5. **For the topping:** In a separate bowl, whip together 8 oz heavy whipping cream, 3 tbsp stevia, and 1 tsp vanilla extract until the mixture is light and fluffy. Spread the whipped topping over the chilled cake.
6. **To serve:** Garnish with cinnamon sticks, star anise, and a sprinkle of cinnamon or pumpkin spice. Slice into 12 pieces and enjoy!
