Lighter Pumpkin Spice Horchata

In a bowl, let the rice, water, and cinnamon sticks soak for at least 3 hours, or preferably overnight. Once soaked, add the entire soaked mixture to a blender, along with 2 cups 2% milk, 1 can Sugar Free Condensed Milk, 1 can fat-free evaporated milk, 1 (15 oz) can pumpkin purée, 1 tsp vanilla extract, and 2 tsp pumpkin spice. If you prefer a sweeter horchata, optionally add monk fruit sweetener, stevia, or honey to taste. Blend until smooth. Strain the mixture, then pour into a pitcher with ice, and enjoy!
